Sweet Potato & Apple Casserole

This is one of my all-time favorite dishes that I have created. It's a dish that I'll make for dinner to go with some pork chops or I'll make it around the holidays to take to parties for dessert. This is a great fall dish but can be cooked all year-round for multiple occasions. Try it as a dessert or a side and let me know what your family thinks!  Ingredients: 2-3 medium sweet potatoes 3-5 apples (I used gold delicious once and it was surprisingly good!) 1 tbs olive oil 1 tbs lemon juice 2 tbs cinnamon 1 tsp nutmeg 1 cup of walnuts/pecans --topping and optional Directions: 1. Preheat oven at 350F. Peel the sweet potato and place it in the microwave with water to steam it. Then cut it up into cubes. 2. Do you trust God?

Do you trust God?   Trusting God can be difficult at times especially when you want to rely on your own reasoning. But what happens when we don't have trust in him? We fear.   Have you were heard the quote, "Everything you want is on the other side of fear?"   When we fear, we don't change, we don't take risks and that limits us. If we never change or challenge ourselves to become better or do things we have never done--life will never get better nor will you get what you want. You will not reach your goals if you never do what you need to do to reach them.  When we fear, we are questioning chances that God gives us, but if we trust in him and do not fear, we have this amazing sense of power, love, and self disciple. (2 Timothy 1:7)  Live fearlessly and trust in God.  Takes chances.   Take risks.   Challenge yourself.   AND DO NOT FEAR.

My Story

Andrew and I freshman year 2012 I was just a girl that decided to go for it. Sounds cliche, but it's true. Up until college I was relatively active with friends, work, swimming and soccer. Although I was never fit, I thought I was healthy, even with the pizza and no veggie daily diet. Coming to college really slapped myself in my face because not only did I gain the freshman 15, I gained the freshman 30. I made excuses for myself to not eat healthy nor exercise, so I was fine with my 30 pound hit and took it. Then college got harder and busier with work, I ate fast food all the time because I usually worked when the cafeteria was open. Although I tried to eat Subway or a fast food salad every once in awhile, it didn't see to do anything. Mostly because I didn't understand that I needed a total lifestyle change.
