Sweet Potato & Apple Casserole

This is one of my all-time favorite dishes that I have created. It's a dish that I'll make for dinner to go with some pork chops or I'll make it around the holidays to take to parties for dessert. This is a great fall dish but can be cooked all year-round for multiple occasions. Try it as a dessert or a side and let me know what your family thinks!  Ingredients: 2-3 medium sweet potatoes 3-5 apples (I used gold delicious once and it was surprisingly good!) 1 tbs olive oil 1 tbs lemon juice 2 tbs cinnamon 1 tsp nutmeg 1 cup of walnuts/pecans --topping and optional Directions: 1. Preheat oven at 350F. Peel the sweet potato and place it in the microwave with water to steam it. Then cut it up into cubes. 2. Wash and cut apples into cubes, sometimes I take the peeling off and sometimes I don't. This is usually a personal preference, so if you don't like the apple peeling, feel free to take it off. 3. Do you trust God?   Trusting God can be difficult at times especially when you want to rely on your own reasoning. But what happens when we don't have trust in him? We fear.   Have you were heard the quote, "Everything you want is on the other side of fear?"   When we fear, we don't change, we don't take risks and that limits us. If we never change or challenge ourselves to become better or do things we have never done--life will never get better nor will you get what you want. You will not reach your goals if you never do what you need to do to reach them.  When we fear, we are questioning chances that God gives us, but if we trust in him and do not fear, we have this amazing sense of power, love, and self disciple. (2 Timothy 1:7)  Live fearlessly and trust in God.  Takes chances.   Take risks.   Challenge yourself.   AND DO NOT FEAR.

“Beware of false prophets who come to you in sheep’s clothing, but inwardly are ravaging wolves.” Matthew 7:15 Recently I’ve realized that Satan works through people, even the people that you could trust the most. These people usually seem incredibly warming, passionate, wear their heart on their sleeve, but when the relationship gets comfortable and you become vulnerable, that’s when Satan uses these certain people to tear you down, be little you, and make you feel less than. By using these people that you trust, he manipulates you into believing that you are a FAILURE and WORTHLESS. His goal is to break you down and question God. Why would you do this God? Why does this person hate me so much? The problem is that it’s not God, it’s Satan. He wants you to hurt, to cry, to feel like you’ve failed, to feel ‘no good’, and most importantly blame God.
